El Chorro and the Costa Blanca area are both very good winter crags. I've only been to Sella in Costa Blanca in April, but I've heard good things about both areas in the winter season. Sella is a 10 hours drive or so from Malaga/El Chorro.

ticinio, switzerland (bouldering, sportcrags, cevio, someo, prato, cresciano, osogna, ..... many more) finale ligure / oltre finale (briliant limestone crags, a must, not polished -> rather skin eating.....)
tom kern: i thought ticino would be pretty cold and with snow in january? finale might be possible, but i've been there in march/april and it was still pretty cold. so for january i don't think it's the best place to go - you should go more south... (sardinia, spain, kalymnos, turkey etc).
Yeah.. it's rumoured the mafia still exist there. But it's a nice location during winter for climbing. There are some informative sites on the web. Simply google for climbing sicily and you can't miss them
@ anderfo i've been in feb. in finale and it was excellent conditions, you have to seek the sun of course, but there is no crowd and very good friction.... in ticino, it really depends on the conditions, you can have snow sometimes, and sometimes awesome sunshine and warm weather. but you're right if you really want to be sure of good weather, better go to malaga -> el chorro...
